The leaves of the Indian curry tree are a favourite spice for the south Indian and Sri Lankan vegetarian cuisine.  They are a favourite spice for rice, dahl and other vegetarian dishes because of their fresh spicy aroma.  Curry leaves are an appetizer and have a beneficial effect on digestion (they promote agni)

How to use curry leaves

Slightly roast in ghee (clarified butter) before adding other ingredients.  When cooked, the small leaves become soft and can be eaten.  Also, a tea can be made by infusing the leaves.


Do not confuse with our “Classic Ayurveda curry powder.  Curry powder is a mixture of many different spices and is not made from curry leaves.
